Learning outcomes of the curricular unit:

The present curricular unit of Food and Human Nutrition I intends to give the student the most elementary knowledge about food composition and to establish the most important criteria in order to healthier and safer food choices. Considering this, with this curricular unit, the student must:

  1. Know the nature and the physiologic, metabolic and nutritive role of the main components present in foods (nutrients and other bioactive constituents)
  2. Know the food groups, their contribution to a balanced diet and the criteria for healthy food choices within each group
  3. Know the specific energy and nutrient needs along the lifecycle
  4. Identify the role of nutrients and other constituents in the prevention or as supporters in specific diseases therapeutics
Syllabus:
  1. Nutrients and other food constituents. Structure and biochemistry, nutritive, physiologic and metabolic role of macro and micronutrients.
  2. Food groups. Presentation of the main food groups, nutritional value, specific recommendations for each group, advantages and disadvantages of their consumption. Criteria for more appropriate food choices.
  3. Energy and nutrient needs along the lifecycle. Food recommendations and nutrient intakes for pregnancy, lactation, infancy, teenagers, adults and during aging.
  4. Food and nutrition in healthy and disease. The role of foods, food groups and nutrients in the prevention of illness, health promotion and as therapeutic elements in cardiovascular, metabolic, rheumatic and oncologic diseases.
