Learning outcomes of the curricular unit:

The present curricular unit of Food and Human Nutrition I intend to give the student the most elementary knowledge about food composition and to establish the most important criteria in order to healthier and safer food choices.

Considering this, with this curricular unit, the student must:

  • Know the nature and the physiologic, metabolic and nutritive role of the main components present in foods (nutrients and other bioactive constituents).
  • Recognize the food groups and the particularities of those foods nutritional composition, as well as the nutritive role of each group.
  • Identify the criteria for a healthier and safer food choice within each group.
  • Know the role of each food group in a healthy nutrition.
  • Know the role of nutrition in health promotion and disease prevention.

  1. FOOD AND NUTRITION
    Food, nutrition and health.
    The role of nutrition in health promotion and disease prevention.
  2. THE LAWS OF NUTRITION
  3. FOODS, NUTRIENTS AND OTHER FOOD CONSTITUENS
    Structure, features, nutritive and physiologic roles.
  4. FOOD GROUPS
    Presentation of the main food groups, nutritional value, specific recommendations for each group, advantages and disadvantages of their consumption.
    Criteria for more appropriate food choices.
Theoretical / practical classes:
 
Nutritional status and body composition evaluation.
        The five levels of body composition and its relationship with body composition.
        Body composition assessment techniques.
The Nutrition consultation.
