Learning outcomes of the curricular unit:
The unit Bromatology and Hydrology is inserted under the item G of Pharmacist Act, DL 288/2001. Its aim is to provide students with general knowledge about the chemical composition of foods and contaminants from the drinking water, as well as the ability to perform the most common analytical methods to determine these compounds.
Syllabus:
- Presentation, objectives, working modes and evaluation criteria
- Weende analysis (or macroconstituents analysis) original and updated, standardization & legislation, sampling
- The European mandatory nutrition declaration for a food, concepts and methods of analysis of parameters
- Methods of analysis of organic micro components and inorganic elements of food
- Contaminants of water and food, sources and chemical characteristics
- Quality control of olive oils, wines and waters, criteria and analytical methods
- Periodic assessment
